for the duck:
- Dry rub mixture: 2 teaspoons sea salt, 1 teaspoon ground cinnamon, 1 teaspoon ground toasted fennel see, 1 teaspoon ground cloves, 1 teaspoon ground star anise, 1 teaspoon onion powder, 1 teaspoon ground toasted szechuan peppercorns
for the sauce:
- Orange juice 1 cup, and an extra 2 tablespoons
- Chicken 1 cup or duck broth
- Cornstarch : 1 tbs
- Grounded pepper : 1 tbs
- 1 cup orange marmalade
- How to make it: Combine orange juice, orange marmalade, and either chicken or duck broth in a saucepan and over high heat, bring it to a rolling boil. Once it boils, lower the temperature and simmer for 15 minutes. Make a slurry mixture with the extra 1 tablespoon of orange juice and cornstarch, thin it out, and add to the simmering broth mixture. Let it thicken for a minute or two.
How to make the duck recipes : Thoroughly rinse the duck and score the skin, careful not to pierce or cut the meat as it will dry out the end result. Take the dry rub mixture and pat and rub it inside and outside of the prepared duck. Tie up the legs of the duck, wrap the center bar with aluminium foil and fill drip pan with 1 cup of water. Cook for about 90 minutes at 180°C heat. Save juices from the rotisserie duck, mix it with orange sauce and serve with the cut up duck
